Fresh Berry Syrup
Great for topping pancakes, waffles, ice cream, etc. as desired.
16 ounces frozen berries or 2 baskets fresh berries, divided
1 cup sugar
2 cups water
1/2 cup water mixed with 2 tablespoons cornstarch
Reserve 1/2 cup of the berries.
Add remaining berries, sugar, and 2 cups water to a pan and let simmer for 25 minutes.
Add the ½ cup water and cornstarch mixture; stir constantly until contents thicken.
Cover and refrigerate any remaining syrup.
This can be made ahead of time and reheated.
When ready to serve, add remaining ½ cup berries to syrup; cook another 5 minutes or until berries are softened.
Yield: 3 cups
